Uff, it looks really delicious!! But I don't do oven or high heat anymore, as I avoid heating food to high temperatures in order to keep the nutrients and enzymes alive :) But I know that heated, boiled, and baked food tastes great and even makes kind of addcited! Since I eat only raw food, I don't eat eggplant, neither raw or dehydrated, as it's not as digestible, as if it were cooked.
Btw. I used to make eggplant salad too...and same as the recipe but added some tahini (sesame nut butter) ;)
