if i was gonna do a restaurant it would be legit serbian food, idk where i'd get the kaimak or beef and lamb from but people don't know what they are missing with this pork and chicken diet of europe and most of the world... and i'd throw in home made plum rakija in the menu too, even though they don't usually serve it at the trad serbian rostijl. they use charcoal grills, the good places, and o m g that plus good kaimak and cevapi and pljeskavica on somun with salad and ljutenica .... i've never tasted such good food in all my life
i am sure it was better here in Madeira before the european bovine meat supply got overrun with lean veal meat also... the taste of grass fed beef grilled over charcoal is unquestionably the real thing, and you literally can't find it hardly anywhere
