Very similar situation with my grandma AND my grandpa just in the last few years. So many false alarms that just ended up taxing the whole family really badly.
Obviously I don't know the situation super well, but if I were in your same current shoes back when my grandma was going through this same situation:
I would go to the event with my full heart in it, not feeling guilty, because this is an important part of your story as you pursue a critical mission to humanity and the world.
And while your living family members may or may not fully understand the significance of what you're building, your ancestors are watching you proudly, and the souls of those still living will MORE than understand once they pass. (And hopefully none of these spiritual gymnastics are required and she holds out just fine until you return - I'm just playing out the worst-case-scenario mental framework so you can go into this decision properly prepared)
I know the thinking about souls & ancestors is a bit woo-woo, but that's how I view it. I sure as heck hope that when I'm old and frail and one of my grandkids has a huge opportunity to pursue that will help change the world in a positive way, they would make that decision to put themselves first.
Some would argue this stance makes me a bad grandson, and some would argue it makes me a great one. Everyone is a different place on the spectrum, but this is personally how I'd think about the situation.
